This is the lazy method after all.
Cooking ribs vertically on big green egg.
That s easy just add an extra hour to the first step making them 3 2 1.
Place the ribs in the big green egg and leave alone for the first hour after that check on the ribs every hour and spray with a mix of apple juice cider vinegar hot sauce and worcestershire sauce after 3 hours bump the temp to 250.
I then preheat my xl big green egg to 250f along with my plate setter so it is the same temperature as the egg when it s time to put the ribs on.
Set the big green egg to 325 degrees f on the indirect cook setting.
Cook for one and a half hours using a rib rack if you need it to have sufficient space for three slabs of ribs.
After 4 5 hours of cooking the ribs should be nearly done.
Stabilize your big green egg between 225 250f then put the ribs on when you see sweet blue smoke for 4 5 hours with the dome closed and no peeking.
Set your egg to 110 c normally this is draft door open 1 2 cm and top vent with the tiniest of cracks.
Add your apple wood chips and your hickory smoked wood chips for extra flavor.

Cook for another 2 hours at 110 c.
Remove ribs to a flat pan or cookie sheet and brush them all on both sides with honey.
Lay your rib slabs onto the big green egg rib rack over the fire and let them cook for 90 minutes.
Take your ribs off spray with apple juice and then wrap in foil.
Smoke for 3 hours.
Wanna do spare ribs instead.
Once again feel free to adjust the middle and last step if you want less tenderness or more crust.
Set the egg up for indirect cooking with a conveggtor at 325 f.
When doing a big multi hour low and slow cook i always clean it out real good before i get started so i don t end up with fire control issues.

These are baby back rips and we did the 2 2 1 method.
The result will be moist smokey delicious.
Using a handful of hickory and cherry chips will help carmelize the ribs.
